The salsa can be made up to 3 days in advance, and will actually improve if it has at least 1 day for the flavors to come together.

Ingredients
- 6 large tomatoes, diced OR 1 can diced tomatoes
- 4 cloves garlic, pressed
- ½ onion, finely diced
- 1 jalapeno, seeded and minced
- 1 lime, zested and juiced
- handful fresh cilantro, minced
Directions
- Put all of the ingredients in a bowl with a lid. Stir to combine, and refrigerate.
- Serve with vegetables – carrot sticks, broccoli, cauliflower, bell peppers – and toasted pitas.
