The salsa can be made up to 3 days in advance, and will actually improve if it has at least 1 day for the flavors to come together.

Diced Tomato Salsa

Prep time: 30 min. Makes enough for 60

Ingredients

  • 6 large tomatoes, diced OR 1 can diced tomatoes
  • 4 cloves garlic, pressed
  • ½ onion, finely diced
  • 1 jalapeno, seeded and minced
  • 1 lime, zested and juiced
  • handful fresh cilantro, minced

Directions

  1. Put all of the ingredients in a bowl with a lid. Stir to combine, and refrigerate.
  2. Serve with vegetables – carrot sticks, broccoli, cauliflower, bell peppers – and toasted pitas.
