I love a good jicama salad recipe for a hot summer evening. The crunch, the slight sweetness, the lightness and cooling all combine into some of my favorite healthy vegan recipes for summer.
My favorite way to prepare jicama is to grate it, and although I hate grating the end result is so worth it. If you have a food processor with a grating blade, it goes much faster.
I love bringing fresh herbs - like mint - into a summer salad. They add so much flavor, and they also add a ton of nutrients! Parsley is one that I love to add to any meal, but mint brings a really special flavor to this salad.
Summer is a perfect time to focus on eating more fresh, raw foods because they'll help keep you cool. Plus, you don't have to turn on your stove, BBQ or oven so they help keep your house cool.
