This gluten free peanut butter cookie recipe is so simple and yet so yummy. It's from Allyson Kramer's brand-new cookbook, Great Gluten-Free Vegan Eats. The book itself is gorgeous, and full of Allyson's amazing photographs of her healthy vegan recipes.
Allyson is a master of gluten-free baking, so if you're looking for some good gluten-free bread, muffins, cakes and cookies, you should definitely check this one out.
Her book also has tons of delicious gluten-free ideas for breakfast, lunch and dinner. I can't wait to get my copy! I'm just waiting on the slow shipping to Canada.
Once it arrives, I have plans to cook my way through a good chunk of it and report back to you with my thoughts. I've had a look at lots of the recipes, though, and I know already that I'm going to like it! I know Allyson's style, from the recipes she posts on her website ManifestVegan.com, so the only question left is how I'm going to make out with the more involved gluten-free baked goods.

Prep time: 8 minutes
Cook Time: 9 minutes
Cooling Time: 10 minutes
Time from start to eating: 27 minutes
Makes 20 cookies.
Allyson's notes: Naturally flourless, these cookies pack in a whole lotta peanutty flavor and have a soft texture to boot! Be sure to let them cool completely before trying to pick them up, or they’ll most definitely crumble.
