Phil and I are in Paris tonight, and we asked our hosts Karine and Kelric (who are vegans) what we could make as a traditional French dish that could be made as a healthy vegan recipe. They suggested a French Ratatouille recipe, which is a dish from the Southern region of France - Provence.
It is a simple vegetable stew, served with rice. Karine mentioned that in the South of France, where the weather is warmer, they eat light foods and mostly vegetables. It sounds like a great place for vegans and vegetarians! In the Alps, where the weather is much colder, she said they eat a lot of cheese, meat and heavy warming foods.

Hello and welcome to Freshly Served healthy vegan recipes in Europe. Phil and I are currently in France and we’re staying at the home of some friends that we met through coachsurfing which is a website where you can stay with people and so Karine and Kelric are with us right now and I am in their kitchen which is very small but very beautiful.
And what we’re making tonight is Ratatouille which is a dish that they told us about that’s from the South of France, you’ve probably heard of it and I’ve heard of it before as well but I didn’t know that it was actually French.
So here we are making that and I got some rice going on the stove over here. Its cooking away, we’re gonna served our Ratatouille over the rice and I’ve got a pot heat up over here and I’ll just add a little bit of olive oil in there and I’ve got my onion chopped and ready to go.
And they have this cool kind board that fits over their sink and all of my vegetables are right underneath.

Now on with our Ratatouille, we’ve got some vegetables going in here. I got some eggplants, zucchini and three different colors of peppers and I was chopping at my vegetables and I got the zucchini going and Kelric came over and said “actually Ratatouille is usually with diced vegetables.”
So anyway, I read the recipe that they showed me and it said “ondel” which I thought means round but anyway it supposed to be diced so from there I diced.
There are vegetables going and I put some salt in there so I’m gonna covered it up so that they can cook slowly and then I’m going to move on to chopping one of the more important ingredients in our recipe which is tomatoes and this I will diced.
So now that I have chopped a mountain of tomatoes over here, they are going to go into the pot with the rest of the vegetables, in big amount. (Just barely fits)
Ok! I’m gonna give that a stir, through and then I’m going to put our seasoning on here which is salt and herbes de provence, so provence is the region where in south of France where Worcestershire sauce from and the herbs for that region are oregano, basil, thyme, rosemary and marjoram.
There’s tomato, so some salt in there and the herbs (they got this cool herb presser, I don’t even know how to use this. Am I using this right?) And there’s a lot of vegetables in here so I’m gonna put a lot of herbs in here.
So all of my vegetables are in the pot now, simmering away, I’ll just gonna leave this to cook with thick cover on so that that all of the juices can combine and everything will cook very nicely. The juices won’t evaporate off the vegetables.

Healthy Vegan French Ratatouille Recipe Directions
Cook the rice by bringing 3 cups of water to a boil, adding a pinch of salt and the rice. Allow the rice to boil a couple of minutes, then turn down to simmer and let it cook, covered, 45 minutes
Heat a large pot to medium and saute the onion in olive oil. Add the garlic, then eggplant. Allow each vegetable to soften before adding the next. If you like, use 3 different colored peppers. Before adding the tomatoes, add some salt to the pot and cover for 10 minutes. Once you add the tomatoes, add a bit more salt, some pepper and the herbes de provence. If you don't have the exact mix, just use what you have. Cover again and allow to simmer for 20 minutes, or until the vegetables are very soft.
Serve the rice and vegetables side by side on your plate, and spoon some of the sauce over the rice. I hope you enjoy this French ratatouille recipe, my latest healthy vegan recipe, from France!
