Vegetarian Chickpea Recipe With Cinnamon/Lime

Tonight’s vegetarian chickpea recipe features chick peas, also called garbanzo beans. They are an excellent source of many nutrients like iron and protein. They have an amazing texture when you cook the dried beans rather than using canned, and will have retained more of their nutrients, making them very useful in healthy vegetarian recipes.

Cauliflower blends well into the flavors of this dish, and a bit of lime livens things up.

Makes enough for 2-3 large servings.

Healthy Vegetarian Chickpea Recipe Ingredients

  • 1 can chickpeas (or 1/2 cup dried, fully cooked)
  • 1 tsp olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • ½ head of cauliflower, chopped
  • 2 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp allspice (optional)
  • Sea salt to taste
  • 1 lime, zested and juiced.

Healthy Vegetarian Chickpea Recipe Directions

  1. Rinse and drain the chickpeas. If you are using dried chickpeas, they must be fully cooked before you begin. How To Cook Dried Beans
  2. Heat a large pan to medium and sauté the onion in olive oil until translucent. Add the garlic, and allow it to cook until soft.
  3. Toss the cauliflower in the pan until it is coated in oil, and allow it to cook until it is starting to brown.
  4. Add the chick peas to the pan, sprinkle the spices, salt and lime zest over the whole dish, and stir to combine. Pour the lime juice into the pan, and cover it if you have a lid. Allow this to cook for at least 10 minutes, for the beans to absorb the flavor.
  5. This vegetarian chickpea recipe is fantastic served over greens, but like some of my other healthy vegetarian recipes, it can also be served on a cooked grain if you like.
