Vegan Potato Recipe

This vegan potato recipe is incredibly simple and easy to make while traveling, and yet has lots of rich flavor from the fresh vegetables. We didn't even use oil or herbs and it was one of our favorite healthy vegan recipes in awhile.

Phil and I headed to a hostel after staying with a new couchsurfing friend, Ibrahim, who has a pottery shop in Sultanahmet (where the Blue Mosque and the other major tourist spots are). After being out in the Istanbul heat for the afternoon, we were after some fresh vegetables for dinner.

There are small market stands all over the place in Istanbul. Everything is in season and much of it is local, though we haven't seen any organic produce yet. We found an organic store, but they only sold dry goods and soap.

We picked up the vegetables that looked good and made a simple meal out of it. With fresh vegetables (and a few fresh olives), you don't need much else to make a delicious meal.

So while I chopped up my vegetables, I will show you a little clip, we were coachsurfing last night with a guy named Ibrahim, who was very fun and we got to hang out in his pottery shop for a little while during the afternoon. (Video Clip Playing)

Tonight what we’re making is we’re trying some potatoes and basically what happens is we went to the market, there’s a bunch of fresh fruits and vegetables stands all over Turkey and well Istanbul. That’s all seem so far but there’s lot all over the street of Istanbul so we went to our neighbourhood store and saw what they had in season and that’s what we are going to cook tonight.

So, I’ve got some potatoes ready to go, we’re gonna put these into this pot over here. I‘ve got a little bit of salt in there to help them boil and they are going to go until they are soft. The rest of the vegetables I’m just going to do fresh and I’m gonna go chopped those up right now. I’ve got some red peppers, some tomatoes and some cucumbers. (Video Clip Playing)

So, the tomatoes are gotten cooked and Phil was kind enough to drain them for me and they are now still in that same pot, they are just on the heat and I haven’t added any oil because we don’t have any here.

And I’m just gonna add these fresh vegetables to mix everything together and heat it up just slightly so I’ve got the cucumber, I’ve got some nice fresh olives, the tomatoes and the red pepper. I’m gonna stir these all together and all I’m gonna used to season this tight is a little bit of salt. Olives are quite salty so I don’t really need much but just to bring the flavours out of tomatoes and peppers.

I guess we’ve been getting used to eating very simply on our trip. People at home could use a bit of oil and some spices. Right! I’ve probably suggest, just a few light herbs like basil, oregano and those kind of Mediterranean herbs. So there we go, I’m just gonna put a little sprinkle of salt and I also don’t have any black pepper otherwise, probably we’ll put some of that on here too.

So there is our finish Mediterranean potato dish, it is very very simple but when you have fresh vegetables that are very delicious you want to take advantage of their flavours and not add too much to them.

Healthy Vegan Potato Recipe Ingredients

  • 3-4 large potatoes, diced
  • 1 cucumber, sliced and quartered
  • 4 small tomatoes, diced
  • 2 red peppers, diced
  • handful black olives, pitted and chopped
  • sea salt

Healthy Vegan Potato Recipe Directions

  1. Put the diced potatoes in a pot of lightly salted water, bring to a boil then turn down and simmer for about 30 minutes.
  2. While they are cooking, chop the rest of your vegetables. Once the potatoes are cooked, drain them and put the pot back on low heat. Add the rest of the vegetables and a sprinkle of salt, stir everything together, leave it to lightly heat for a few minutes, and you have a simple vegan potato recipe.
