Simple Quinoa Recipe

For dinner, my goal was to make a simple quinoa recipe that would be easy to digest so as not to cause any issues on our long bus ride. We also wanted to use up the last of our quinoa so that it wouldn't weigh down Phil's pack anymore.

Tonight Phil and I are getting on a bus that will take us down to the south coast of Turkey. The trip will take 12 hours, dropping us in a city called Antalya in the morning.

We've heard really good things about the buses in Turkey, that they are very comfortable and that they have someone come around to give you drinks and snacks along the way, like an airplane.

Comfortable though it may be, it is still 12 hours on an overnight bus.

Phil found this video a bit boring, so he decided to spice it up with a few pictures from Istanbul.

Simple Quinoa Recipe Ingredients

  • 1 cup (dry measure) quinoa
  • 1 onion, diced
  • 1 aubergine (eggplant), sliced into half-moons
  • 1 zucchini, sliced into half-moons
  • 2 carrots, sliced
  • salt and pepper
  • 1 Tbsp dried Italian herb mix
  • 1 lemon, zested and juiced

Simple Quinoa Recipe Directions

  1. Rinse the quinoa with water, drain, add 2 cups water for every 1 cup quinoa. Sprinkle a bit of sea salt in the water, bring it to a boil for a minute, then turn down to low and simmer for 20-30 minutes. Quinoa is fully cooked when you see the swirl of the grains, with a translucent center, and it is fluffy. Do not stir the quinoa while it is cooking.
  2. Heat a large pan to medium and add the diced onions. You can use olive oil if you wish, or steam the vegetables like I did, since I didn't have any oil. Give the onions a minute or two on the heat, then add the eggplant and a tablespoon or so of water.
  3. Leave the eggplant to cook while you chop the rest of the vegetables, then add them to the pan as well. Add a bit more water and some sea salt, stir and then cover with a lid and leave to cook for 15 minutes.
  4. When the eggplant is soft, add the herbs and lemon juice while the pan is still hot to deglaze. I used water, but I think lemon would have been perfect. White wine would also go very nicely in this dish. Serve the vegetables on top of a bed of quinoa. I hope you enjoy this simple quinoa recipe, and more of my healthy vegan recipes.
