My photography skills weren't great for this baked pasta recipe, with the very low light, but this dish was awesome! An oven wouldn't be my first choice for making pasta, and in fact some Italians might scream if they saw this recipe.

Baked Pasta Recipe

I bought the pasta because I saw organic whole wheat penne for the first time on our trip, and it was 0.75 Euros for the bag. I was so excited until I got back to our hostel and found that we had no stove - just an oven.

My first attempt at oven-baked pasta was not the greatest, but I learned from my mistakes and this dish turned out really nicely, much to my surprise. A better cooking method would be to boil the pasta, then bake it underneath the vegetables, but should you find yourself with a bag of pasta, an oven and no stove I offer this recipe.

Prep time: 10 minutes
Cook Time: 30 minutes
Time from start to eating: 40 minutes
Makes 2 large servings

Baked Pasta Recipe Ingredients

  • 250g whole wheat pasta
  • 1 1/2 cups water
  • pinch salt
  • 1 onion, chopped
  • 2 cups mushrooms, sliced
  • 1 red pepper, chopped
  • 1 Tbsp olive oil
  • salt
  • 1 tsp Indian Spice Mix

Baked Pasta Recipe Directions

  1. Heat the oven to 350 degrees F.
  2. Put the pasta in a baking dish and pour the water over it, adding a pinch of salt.
  3. Chop the vegetables, and mix the oil into them with your hands. Add some salt, and mix that in with your hands as well. Add the spices, making sure they get mixed into the oil. Place the vegetables in a layer over the pasta.
  4. Put the dish in the oven, and bake for 30-40 minutes, or until the pasta underneath the vegetables is soft.
