Phil put together this green lentil salad recipe for us for lunch, and it was so good I wanted to share it with you. The best healthy vegan recipes are sometimes the ones you just throw together in the moment.

Lentils are a great way to get complex carbohydrates, fiber, protein and valuable vitamins in your diet when traveling. They are fast-cooking and usually easy to find, even in small stores.
Cooked and seasoned, they are perfect paired with lettuce and fresh vegetables, especially when you don't have a salad dressing.

Makes 2 large salads
Green Lentil Salad Ingredients
- 1 cup lentils (dry measure)
- pinch salt & pepper
- 1 Tbsp Italian Herb Mix
- 1 tsp onion and garlic powder mix
- 2 cups lettuce, torn
- 2 carrots, chopped
- 2 apples, chopped
Green Lentil Salad Directions
- Put the lentils with enough water to cover by 2 inches in a pot, on high heat, and bring to a boil. Turn down to low and simmer for 30 minutes, or until the lentils are just cooked. Do not add salt until the lentils are cooked. Once they are cooked, drain the water, leaving just a bit to stir in the seasonings.
- Add the salt, pepper, herbs and onion/garlic powder and stir to combine thoroughly. Stir in the apples, and a small squeeze of orange juice is an excellent addition.
- Arrange the lettuce and carrots on plates, and spoon the lentils over them. This dish is best served at a sunny table outside. I hope you enjoy this green lentil salad, and many more healthy vegan recipes.
