Whenever I go to a friend's house for dinner, my favorite dessert to bring is homemade cookies. I just love the compliments from people when I tell them the cookies are vegan. And since most of the vegan cookies I make are actually healthy, I also get to tell people that these cookies are good for them!

When I first decided to go vegan, I had to relearn how to make cookies. It was tough! There are a lot of recipes on the internet, but most of them use ingredients that I didn't want to use, like egg replacer and margarine or shortening.

And since I am interested in living a healthy lifestyle, I didn't want to use the white sugar or brown sugar that the recipes called for, and definitely not so much sweetener. For example, take the chocolate brownie cookies to the left (click on the photo for a better view). I now use applesauce and optional raisins or carob chips, all of which are naturally sweet and decrease the need for sweetener.

I learned all kinds of interesting techniques when I went on this mission of research and experimentation to figure out how to do it properly. I took culinary courses and I started trying things. I also took the knowledge I was gaining while studying to become a Registered Holistic Nutritionist and incorporated that into making cookies that were actually healthy. After quite a few failed batches, I figured out the important techniques, ingredients and ratios to make the best vegan cookies every time.

The transition to vegan cookie baking can be difficult when you don't know where to begin, so it is really helpful to learn these techniques. In each recipe, I talk about these techniques and show you how to do them.

The Right Ingredients

What are the right ingredients? First, they should be easy to find. The ingredients in these recipes will generally be in your grocery store. Many of them will be in your pantry already. Occasionally, I use less common ingredients in order to make the recipes more unique and give a more well-rounded nutritional profile, but I always include a more common substitution that works just as well.

Ingredients for cookies should not be too expensive. There are a couple of important things that cost a bit more, but the majority are well-priced. This is important because you don't want to spend a lot of time and money trying to find some obscure, expensive ingredient.

The right ingredients:

  • are whole foods, nutrient-dense and mostly alkalizing
  • do not become toxic when heated at high temperatures
  • are fresh and organic when appropriate, if possible

Here is a list of ingredients you will NOT find in any of these recipes:

  • canola, sunflower, or safflower oil
  • soy (not as good for you as some people claim)
  • margarine
  • egg substitutes
  • white or brown sugar
  • white flour
  • hormones and antibiotics found in animal products
  • preservatives, dyes, or other chemicals

The ingredients should be natural and as unrefined as possible. One of the main reasons to live a vegan lifestyle is for our health, so we don't want to be substituting highly processed, unnatural ingredients. That brings me to substitutions...


Substitutions

There is no need to use butter or shortening in cookies. There is no need to use eggs. It is also counter-productive to use the typical vegan substitutions for these ingredients, such as margarine and egg replacer. We want our food to be healthy right? The same can be true for cookies. Using proper oils and sweeteners so they are healthier for you and your loved ones is easy once you understand the processes and the reasons.

Many of the vegan cookie recipes I have come across in books and online include simple substitutions from animal products to vegan alternatives, but these ingredients are often just as bad or worse for our health. I use creative substitutions that are good for you, while still keeping the great taste.

Also, so many vegan cookie recipes do not attempt to use healthy sweeteners, which is a waste of time and energy for most vegans who feel that one of the main benefits of being vegan is for health. Finding good vegan cookie recipes on the internet is an especially big source of frustration.
