Hi guys! I am outside today because I have something a little bit more interesting for you than the usual video recipes and I thought that this would be the perfect spot to tell you about it. So, for those of you who don’t know, Phil and I got married a few weeks ago and the spot where I am standing is the exact location where we had our ceremony.

It is out amongst the tress and you’ll notice that this tress are in rows the reason being is this is Phil’s parents farm. They don’t grow soybeans, they don’t grow corn like pretty much every other farms around here for miles. What they grow here are trees and they sell them to people to put them in their garden or landscape or what have you.

Ok! The reason that I am here today is to tell you about a little piece of our wedding that Phil and I put online for you guys. I’m really excited about it. So, Phil’s mom and I put together a vegan menu for our wedding and Phil has made a nice little section on our site where you can go and find every single recipes of what we served.

We started in the afternoon with some snacks after the ceremony. And then we played some games which were really fun. Anyway that’s a whole other story. So after the games we had hors d'oeuvres and all the recipes are posted for those guys. Phil’s mom and I went a little bit nuts on the hors d'oeuvres because we both loved them so much.

And then, of course dinner recipes and desserts which I’m sure you are all be dying to know what we had for our vegan dessert and it was delicious. We had some blueberry lemon tarts and then some chocolaty things which I let you go to the website and find that out.

So if you guys want to go and check out those recipes Phil’s set up a handy little section on our website for you, healthyveganrecipes.net/Wedding and you’ll find all the recipes along with a few photos that Phil has post up there for you guys.

He has also posted the links to our wedding photos, all of them which were not taken by a professional photographer what we did instead was just asked our family to take a whole bunch of pictures and one of the games that I had going on in the afternoon was a photo scavenger hunt so there’s some pretty funny pictures on there. And then you know I find that if I stay outside long enough sometimes Phil makes dinner so I think I might hang out here a little bit.

Vegan Wedding Snacks

Our day started off at 2pm with a ceremony in the trees at Phil's family's rural home. After that, we had some vegan snacks ready to go.

Other than my favorite afternoon snack of fruit, we had some vegetables (some grilled and some raw) and toasted pitas with the following:

  • Hummus
  • Black Bean Dip
  • Diced Tomato Salsa

During snack time, my aunt and uncle made margaritas to get the party going. Phil and I set up some games around the property, and put our guests into teams for a bit of a tournament. We played frisbee golf, bocce ball, had a treasure hunt and a photographic scavenger hunt, did some word puzzles and played the Apple Olympics (a crazy relay race with apples).

Not most people's idea of a wedding day, but it was perfect for us, so laid back, stress-free and fun.

Vegan Wedding Hors D'oeuvres

Once the games tournament wrapped up, the real fun food time started with vegan hors d'oeuvres. Phil's mom Jenny and I put most of our creative energy into hors d'oeuvres because they're so fun and impressive. Here's a list of what we served:

  • Savory Shortbread Topped With Fig Walnut Tapenade
  • Black Bean And Sweet Potato Phyllo rolls
  • Basil Pesto Canapes
  • Avocado And Red Pepper Sushi
  • Spinach And Mushroom Phyllo triangles

Vegan Wedding Entrees

After those fantastic appetizers, we wanted to keep dinner fairly simple, but elegant. We had 2 vegan food choices for the main dinner course:

  • Kamut Penne With Basil Tomato Sauce And A Walnut Crumble Topping
  • Kamut Fusilli With Roasted Red Peppers, Spinach, Kalamata Olives, Capers And Mushroom Wine Sauce

And on the side:

  • Mixed Green Salad With Blueberries And Sliced Hazelnuts With A Roasted Garlic Vinaigrette
  • Fresh and Seasoned Vegetable Plate

After dinner, there was a bonfire going and Phil's dad's band played on the back patio, so lots of dancing, of course, and dessert...

Vegan Wedding Dessert

Dessert is an area that tends to leave people wondering about vegan options for some reason. I always like to give the choice of something chocolatey or something fruity (or both), so there were 2 options:

  • Chocolate Krinkles - The chocolate side was filled by something that I call krinkles, since that's what my nana called them. I've altered them from her recipe to make them as healthy as they can be, despite being chocolate. They are dark chocolate with natural peanut butter, mixed with puffed rice and then chilled to set.
  • Blueberry-Lemon Tart With An Almond-Oat Flour Crust - The lemon is thickened and set with arrowroot and agar rather than eggs. Some toasted coconut flakes were sprinkled on top while it set.
